Wine produced from ripe and selected Negroamaro grapes, a black grape variety grown almost exclusively in Puglia, particularly in Salento. The origin of the name is nothing but the repetition of the word black in two languages: niger in Latin and mavros in ancient Greek (hence the dialectal maru). It is one of the main vines of Southern Italy.


The vinification takes place thanks to the long contact time between the marc and the must to allow a greater extraction of coloring substances. The marc is separated from the liquid part. Fermentation is completed in stainless steel tanks. Refinement takes place after fermentation is completed, the wine is separated from the lees and stored in stainless steel tanks for about a year. Finally it is stabilized, filtered and bottled.
